Potato Quiche (Photo)

Thinly slice potatoes and toss them in olive oil and black pepper. Bake them in oven at 450 F for 10 minutes.

Arrange the baked potatoes in pie crust. Whisk eggs, half and half, chives, nutmeg, pinch of salt and pepper. Stir in some shredded cheese and pour the mixture on top of the potatoes. Bake for 40-50 minutes at 350 degrees F. Cool before slicing. 

Get hold of whole red pepper corns and sprinkle on top of quiche mixture before baking - they look wonderful, and taste wonderful too.
